
Never-Fail
Fudge

2 cups sugar
1/2 stick of margarine
2 cups mini marshmallows |
6 ounces undiluted evaporated milk
1 package (12 ounce) Chocolate chips
1 teaspoon Vanilla |
Attention: Don't make
this on a very humid day!
Place everything but Vanilla and Chocolate chips in a heavy
saucepan. Cook over medium heat, stirring constantly, til
mixture comes to a boil and boil for 5 minutes, stirring
constantly. Remove from heat and add Vanilla and Chocolate chips.
Pour quickly into a buttered 9x9" square pan. Cool until set and
cut into squares.
Variations:
Opera Fudge:
Substitute 2 cups of White chips for Chocolate chips and add 1/2
cup each chopped pecans and dried cherries.
Peanut Butter:
Substitute 2 cups peanut butter chips for chocolate chips.
Candy Bar:
Chop 2 of your favorite King Size candy bars and stir in just
before pouring into pan.
Vermont (Maple) Fudge:
Use 2 cups Butterscotch chips instead of Chocolate chips, and
substitute Maple extract for Vanilla.
Lemon:
Substitute White chips for Chocolate, and use lemon extract
instead of Vanilla.
Peppermint Fudge:
Use Chocolate chips for Chocolate mint, White chips for plain
peppermint, stir in 1/2 cup crushed peppermint candy and use
peppermint extract instead of Vanilla in the white peppermint
fudge
Eggnog Fudge:
Use 2 cups White chips instead of Chocolate, instead of
evaporated milk use eggnog. Add 1 teaspoon rum extract in place
of Vanilla, and stir in 1/2 teaspoon nutmeg
Note from Praying Bear: I make fudge every year for gifts
for family and friends. When I ask what they want, they usually
say "fudge!" Any kind will do! |

Red Cabbage

one red cabbage
Balsamic vinegar
orange slices from 2 oranges |
salt to taste
pepper to taste
1 cup walnuts in pieces |
Wash
the cabbage and cut in very thin strips. Do not cook at all.
Season with salt and pepper. Add some Balsamic vinegar. Add
orange slices and mix well.
Add the walnuts, mix once more and serve. Makes 4 servings. |

Red Wine
Christmas Cake

250 g butter (or margarine)
225 g sugar
250 g all-purpouse flour
4 egg yolks
4 egg whites (beaten)
2 tablespoons Vanille sugar (or
1/2 teaspoon Vanille extract)
1 1/2 teaspoons baking powder

1 tablespoon Cocoa powder
1 teaspoon cinnamon
1/8 l (125 ml) dry Red wine
sliced chocolade chips
sliced almonds and hazel (as many as desired)
Decoration Stuff:
sugar stars (see foto), small sugar silver balls or anything
that suits Xmas

Using an electrical mixer at
medium speed, beat butter and sugar until sugar is dissolved.
Add egg yolks. Beat at maximum speed for 5 minutes. Add the
Red wine, Cocoa powder and cinnamon. Beat for more 3 minutes.
Add flour and baking powder and beat until dough is creamy.
Add almonds, hazelnuts and chocolade chips and beat for 5
minutes. Add the beaten egg whites and do not use any machine
anymore, just stir with a wood spoon (or any other but not
metal one). Bake in oven 350°F (180^C) for one hour. Let it
cool completely before serving.
